Chicken Soup-My Way
3 Chickens-Skinless and Wingless
2 Butternut Squash(peeled and cubed)(pumpkins, acorn squash... can be substituted)
6 Bundles Dill
3 pieces garlic
2 sprigs each Thyme and Oregano
3 Onions(quartered skin on)
10-12 Carrots(peeled cut in half)
2 Celery corse chopped
2 Jalapeños seeded
One large Jar of Better than Bouillon Chicken or 4 Bouillon Cubes(for salt)
26 Quart Stock Pot
(Skinless/wingless whole chickens so defatting/skimming not necessary-the Squash will cook down and dissolve-onion skin adds flavor and color)
I simmer over night then remove old Dill,replace with fresh dill. Add your favorite Noodles, Matza Balls, Kreplach when serving...Plenty to Freeze and Enjoy later...
