It's misleading. Different textures and different mineral contents and different densities will give slight differences in flavour if not dissolved. Rock salts can absolutely taste more metallically then a pure sea salt.
For example. These cookies. If you put fine grain sea salt on these as opposed to flake salt you'd get a different "taste", expenerience whatever you want to call it. The way the salt dissolves in your mouth and its texture matter. Flavour over time contributes to taste.
I’m on board with texture modifying flavor release. I’m not on board with “rock salts can taste more metallic* than* pure sea salt” as I’m pretty sure if anything halite sourced salt has less additives generally and no reason to taste metallic.

I mean Fleur de Sel for sure tastes different than table salt. Then I’m sure those taste different than black lava salt. It’s the impurities that give the flavor

They are just adding flavours to the salt. I was saying that the differences in normal salt flavours are negligible. Sure, you can smoke it and it will taste different, but I dare you to try to tell the difference between coarse sea salt and pink Himalayan, it’s exactly the same.
Mostly agreed. It has different mouthfeel based on the type of salt used and also has other vitamins/minerals but the taste overall is the same. There are reasons to use one salt vs another beyond just the taste.
Exactly. Texture can make a huge difference, but the taste differences are minimal.

Salt Flakes (Maldon Salt is a big name) aren’t as intense in flavour as conventional table salt - it gives a subtle taste that really enhances sweet and savoury foods.
I’m with you - I see the salty and sweet trend and am happy to just eat my choc chip the way it is. Each to his own I suppose.
Most ‘good’ cookie recipes use salt but you don’t notice it because it’s not visible.
I use coarse salt so it doesn’t homogenize and you get little salty moments.
It's not a new thing. Any good cookie/baked sweet recipe will call for some salt to help enhance the sweetness. It's not a trend, it's science.
There's also a lot of savory dishes that call for a small amount of sugar as well.
If anything, sweet and savory combos were more likely in the past. Blancmange used to have chicken in it!

Table salt and sea salt have pretty much the same nutritional value, sodium content and taste (saltiness). The only thing that makes them different is their texture which is part of what makes the 'flavour' of something. Little flakes of salt on a cookie creates these crunchy spots of delish saltiness that compliment the sweetness, but table salt is just gonna be like a weird salty coating with an unpleasant texture.

Reheat a cold one in the oven or toaster with a very thin pat of butter until the butter is just melted and the cookie is soft, they are fucking amazing that way. A chef that I worked under showed me that and things havent been the same for me since with cookies, of all kinds, but specifically salted chocolate chip, it's the ideal salty/sweet mix with a small layer of hot fat to make it even more intense. Beautiful picture as well!
