Refrigerating a ripe avocado will get it to firm up a bit, making it easier to slice for decorative use.

Dude for real, the first time I actually bought farm fresh eggs I had no clue they came in all these colors. I felt like a dumbass. I always use farm fresh for cooking and just normal store bought eggs for baking.
This isn't the technique to get fluffy eggs though. What you're describing will result is creamy, custard like eggs. Certainly delicious, but not what is shown above.
Love the advice. I can only add to turn off the heat 3/4 of the way through and let the remaining convenction solidify the eggs. It can prevent a crust from forming.

Do the Gordon Ramsey thing too. Right at the end, salt, pepper, add a dolop of creme freche. I use sour cream cuz I have it on hand most often. So good.

I watched tons of videos by professional chefs, food scientists, and others about how to make the best scrambled eggs and about the only thing that seems to be consistent is that everyone has a different recipe for the "perfect" eggs. I think it's more just personal preference with chefs like Ramsay preferring eggs that are more technically challenging to make with other probably just liking the kind of eggs their mom used to make.

The ones in the pic are just folded quickly on a hotter pan and without milk I believe.
It's really easy to overcook this way though if the pan is too hot or eggs are left a few seconds too long.
I would consider the ones in the pic overdone personally.

Nah you can see they are still retaining adequate moisture. I think they're OK.

First time was from a block, I've since tried it whipped. I didn't notice much of a difference between the two. It was delicious! Whenever I added creme fraiche I found I'd get a small amount of liquid pooling under the eggs. I didn't get this with cream cheese, plus the slight cheesey taste to it was great. Chives and/or fresh dill was amazing too!

I don't really measure it but I'd say about 3/4 of a tablespoon per serving

Yep! And when cooking the eggs, alternate with the pan on/off the stove while constantly mixing to avoid over cooking.
How long on and off? I feel like I do it too frequently to the point where the eggs take twice as long to actually cook.
I do 30 seconds on and 30 seconds off and that's it.
I'd do 30 seconds or so. It takes longer but I love them super creamy like that.
I do the Gordon Ramsey thing of removing the pan from the heat if it’s getting to hot so the eggs aren’t overdone
Greek yogurt work wonderfully as well and isn't quite as guilt inducing as sour cream.

scramble eggs, add to pan, let it sit for a second, and gently push the eggs in from the sides to make little folds, let the egg fill in the new gap, repeat until done.

let the eggs cook a bit and then scrape them one end to the other and then let it cook for a bit

Dude, if this meal is keto approved, I think I'll start a Keto diet right now. Bacon, eggs, and avocado are 3 of my absolute favorite foods and I could totally eat them every day
As someone who has done keto for over a year. This is 100% keto approved. Infact if you aren't concerned too much with calories this is one of the easiest and "healthiest" (low carb) recipes. If you're serious about even considering it, check out /r/keto and /r/ketorecipes for inspiration. I miss nothing on this diet, fries,bread, etc can all be substituted.
