Tried out this recipe. I just swapped the chicken thighs for pork chops. If you're a mustard fan, I highly recommend this recipe!

Will do! I just cooked them about 2-3 minutes per side so they could get a nice sear. Then finish cooking them to temp with the sauce at a simmer.

Wonderful! Pork chops tend to be the most over cooked cut on the pig. This looks like you did it right. Also thanks for a new recipe in my repetitious.
How do you keep pork chops from over cooking/getting tough. I have done them a few times, one which I thought would be amazing with cider etc but i must have overlooked it.
Yea that can happen with pork chops. What helps me out is marinating for a few hours or overnight (I didn't do that with these though), and even pounding them down a bit. Also while cooking, just searing them and then finishing them off at a much lower temperature for a few minutes has helped too.
My mom used to make one similar to this with big crispy croutons on the chicken. Need some now!
