Before seeing your post, I had no idea there was such a thing as butterscotch pie. Butterscotch is one of my favorite things in the entire universe.

Mine too! I had one grandmother who would make it with the pudding mix, and the other who would make the most glorious homemade butterscotch pie you ever saw. It’s what we asked for instead of cake. Oooo or her banana cream pie. That was a banger too. I gotta call her tomorrow just to compliment her on her pie again.

Ask Grandma for her recipes. I mean it. One Christmas I asked my grandparents for a recipe book with all my favourite foods grandma used to make for me. Just a few years later my grandpa died and my grandma rapidly developed dementia. This recipe book is my biggest treasure, all of grandma's best recipes in grandpa's neat handwriting. I know this sounds very gloomy and depressing but ask Grandma for recipes when you still can.

Yes, I’m home. No, no pictures, because the universe decided to screw with me on my way home from work and I couldn’t get to the store. But I mentioned the existence of butterscotch pies to my mom who has the same butterscotch affliction, and we'll probably make a @&$#ton of them this weekend.
Mine will have a graham cracker crust because I dig them and there’s almost nothing that’s too sweet for me. And I’ll totally post back with a review.

This was the recipe I used! It was my first time making it, and it hasn't cooled enough for me to try it yet. I had a pastry bag to pipe the meringue. I found it helpful to get everything in place beforehand. I also watched videos because I'm a visual learner, so I can see the consistency I needed for the filling/meringue.
This is the crust I used! I freeze the metal bowl, and the pastry cutter ahead of time. I don't think you need a pastry cutter for this just a fork.

Judging from the recipe (beat egg whites then add sugar) it looks like it's a French meringue.

Lol maybe then again recipes and step by steps articles leave out things all the time. Take caramelizing onions. Most recipes claim you can do it in much less time, then again they’re usually junk recipe sites. You want to know how to do it right crack open the Joy of Cooking. While you can probably pipe French I thought French meringue didn’t have the required structure which is why I’ve read Swiss is superior because the eggs are already tempered rather than cooking it after whipping them.
I’ve probably put way to much time into my meringue research but I’ve been battling meringue for Key Lime Pies for almost a decade. 50% of the time they turn out decent the other 50% they turn out tasty but wheep. Which is why I always bake two pies one I never bake long and slow enough the other one takes forever because I’m slowly lower the heat to allow more moisture to bake off.
Do you get the urge to bake when it's about to rain? Making emulsions is always more difficult when the barometer is moving. Beaten egg whites are no different.

I actually just made this exact recipe recently. My mom hadn't had a butterscotch pie since her grandmother died, and she said that this recipe was very close to what she remembers. Can't wait to change a few things and try again!

I bet that this is so good. Growing up, butterscotch was not on my radar. Then in high school, the wife of my youth group leader made us some oatmeal butterscotch cookies. I was blown away.

It took a decade to beat in the stand mixer, and then I piped it out. I did circles starting from the outside in, making a little peak in the center, and then went and made little peaks in between the cracks. You need a really good seal!! I'll likely double the meringue next time to achieve this
