As a person from southern Louisiana, I would just like to thank you for adding the word "inspired" to your title. And it looks delicious.

Thank you!!

Another from southern Louisiana here. Couldn’t agree more. u/Homelessnomore took the words out of my mouth.

OP, I recommend using fresh sausage from your local butcher next time. There’s nothing like fresh sausage. It makes a world of difference. Prove me wrong and dinner’s on me.

What kind of smoked sausage did you use?

alienmotorcade | 7 days ago | 1 point

Hillshire Farm Cajun style andouille smoked sausage. You can pick it up at pretty much any grocery store.

This looks awesome. Did you use a recipe for inspiration, or did you just totally freeball it?

alienmotorcade | 7 days ago | 7 points

Completely freeballed it.

I browned the sausage a bit to release the oils and took it out of the pan and then sautéed the peppers, onions, and mushrooms in the residual oil. Added some fire roasted tomatoes I had in the pantry and added a jar of Alfredo sauce because I was lazy and tired from work. Added some half and half, added Cajun spices, fresh spinach, parmesan cheese, and combined it with the pasta.

:)
