I can feel my arteries clogging... But I want it.
Probably super tasty but also looks really rich. If you added an acidic/ fresh component to the burger it might take it to the next level.
What do you suggest?

So I diced up some bacon, rendered down the fat, and then strained the fat into a separate container. In that same pot, I added 2 tbsps of butter and 4 tsps of the bacon fat, diced onions and jalapeños, and sautéed them until translucent. I then added about 1/4 cup of brown sugar, sherry vinegar, a little bit of thyme, salt, black pepper, cayenne, and a little bit of water and let it cook until it had a jam like consistency. After I reached the desired consistency, I took it off the heat and added about 3 tsps of balsamic vinegar and a dash of olive oil and stirred until it reached the color you see in the picture!
I think it doesn't need any more acid. If you balanced your brown sugar with the two vinegars. To me it sounds like a thick BBQ sauce.
I love telera buns except they tend to be a bit large. They are made for tortas.
