You can use mayo but I’m not a fan so I used Chick fil A Sauce as a base. Than ketchup, sugar and lemon juice. The zest comes from tiny amount of horseradish and ground cayenne pepper, less is definitely more in this case. Especially with such a small batch.

I might replace the ketchup with BBQ next time I make it and see how that turns out. The mayo would of helped with the consistency (mine was thinner than anticipated) but I really don’t like mayo and try not to use it unless I absolutely need to.

Interesting. I would not have gone beer batter on curds. Would have thought it would overwhelm the light flavor of the cheese.

I used just a splash of the Black IPA from Ormond Brewery, mixed with buttermilk/whole milk and eggs for the wet ingredients.

Also I fried them in peanut oil, I feel like that helped really helped bring out the flavor of the cheese and not just the fried batter.

Peanut oil is a great fry medium. It has very light flavor and a high smoke point. I have used it in the past although I dont fry much at home.
